Ingredients

  • 1 lb boneless chicken breasts, cooked and shredded
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 3 cups cooked orzo pasta
  • 1 cup grated Gruyere or Swiss cheese
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet, heat olive oil and caramelize sliced onions until golden brown. Add garlic and thyme, cook for 1 minute.
  2. In a mixing bowl, combine shredded chicken, cooked orzo, sour cream, and half of the cheese. Season with salt and pepper.
  3. Transfer mixture into a baking dish. Spread caramelized onions on top and sprinkle with remaining cheese.
  4. Bake for 20-25 minutes until bubbly and golden brown. Garnish with fresh herbs before serving.
