Instructions
- In a large bowl, combine ground chicken, breadcrumbs, eggs, Parmesan, garlic, parsley, Italian seasoning, salt, and pepper. Mix thoroughly until well combined.
- Transfer the mixture onto a parchment-lined baking dish or loaf pan. Shape into an even loaf.
- Preheat oven to 375°F (190°C). Bake for 45-50 minutes until internal temperature reaches 165°F (74°C).
- During the last 10 minutes of baking, optionally sprinkle shredded mozzarella cheese over the top for a crispy, cheesy crust.
- Let the meatloaf rest for about 10 minutes before slicing to retain moisture and achieve a tender, melt-in-your-mouth texture.
