- 2 medium zucchinis, sliced into fries

- 1 egg, beaten
- 1/2 cup panko breadcrumbs

Instructions
- Preheat the air fryer to 400°F (200°C).
- Place the flour in a shallow dish. Beat the egg in another dish. Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a third dish.
- Dip zucchini spears in flour, then egg, then coat with breadcrumb mixture.
- Spray the zucchini fries lightly with cooking spray and place in a single layer in the air fryer basket.
- Cook for 10-12 minutes, shaking halfway through, until golden and crispy.
