Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, paprika, salt, and pepper. Roast for 25-30 minutes until tender.
- Meanwhile, season chicken slices with salt and pepper. Grill or pan-sear until cooked through, about 5-7 minutes per side.
- Assemble bowls with a bed of mixed greens, roasted sweet potatoes, grilled chicken slices, avocado, and feta cheese.
- Drizzle with lemon juice and remaining olive oil. Serve immediately.
