Instructions
- Begin by in a large mixing bowl, whisk together the mashed bananas, eggs, cottage cheese, honey, and vanilla extract until smooth and well combined.
- In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon (if using), and salt.
- Gradually add the dry mixture into the wet ingredients, folding gently until just combined. Do not overmix.
- Grease a loaf pan with a light coating of non-stick spray or butter. Pour the batter into the prepared pan, spreading it evenly with a spatula.
- Place in a preheated oven at 350°F (175°C) and bake for about 55-60 minutes. Test for doneness by inserting a toothpick into the center; if it comes out clean, the bread is ready.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
Notes
- You can substitute cottage cheese with Greek yogurt for a similar protein boost.
- For gluten-free options, replace whole wheat flour with a 1:1 gluten-free flour blend.
