Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potatoes and carrots with olive oil, salt, pepper, garlic powder, and herbs.
- Spread the vegetables evenly on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until golden and tender.
- Remove from oven and serve warm garnished with fresh herbs if desired.
Notes
- Feel free to add a drizzle of honey or balsamic vinegar before roasting for extra flavor.
- Adjust seasoning to taste, or add chili flakes for a spicy kick.
