- 1 cup sweet corn kernels (fresh or frozen)
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain and set aside.
- In a large bowl, combine cooked pasta and corn kernels.
- Add mayonnaise, lime juice, chili powder, salt, and pepper. Toss to coat evenly.
- Garnish with shredded cheese and chopped cilantro before serving.
Notes
- You can add cooked bacon bits or diced jalapenos for extra flavor.
- Chill in the refrigerator for at least 30 minutes before serving for best taste.
