Ingredients

- 1 pound kielbasa sausage, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 carrots, diced
- 3 celery stalks, diced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté sliced kielbasa until browned. Remove and set aside.
- In the same pot, add chopped onion, carrots, and celery. Cook until vegetables are tender.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and canned tomatoes. Stir in thyme, salt, and pepper.
- Return kielbasa to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Garnish with fresh parsley before serving.
Notes
- You can add potatoes or beans for extra heartiness.
- Adjust seasoning to taste.
- Serve with crusty bread for a complete meal.
