- 1 lb beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 potatoes, diced
- 4 cups beef broth
- 1 cup green beans, trimmed
- 2 cups spinach or kale
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add beef chunks and cook until browned, about 5-7 minutes.
- Add chopped onion and minced garlic; cook until translucent, about 3 minutes.
- Stir in carrots, celery, and potatoes; cook for another 5 minutes.
- Add beef broth, salt, pepper, and bring to a boil. Reduce heat and simmer for 1 hour until beef is tender.
- Add green beans and greens; cook for 10 minutes until vegetables are tender.
- Garnish with fresh parsley before serving.
