- For the cinnamon swirl:
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan with butter or line with parchment paper.
- In a large bowl, mash the bananas thoroughly. Add softened butter, sugar, eggs, and vanilla; mix until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet mixture, stirring gently until just combined.
- Mix brown sugar and cinnamon in a small bowl for the cinnamon swirl filling.
- Pour half the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Repeat with remaining batter and cinnamon mixture. Use a knife to swirl through layers.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
