- 1 ½ pounds ground beef
- 1 cup breadcrumbs
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 2 large eggs
- ½ cup BBQ sauce (plus extra for topping)
- 8 slices of crispy cooked bacon, chopped
- 1 cup cheddar cheese, shredded
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, eggs, BBQ sauce, smoked paprika, salt, and black pepper. Mix thoroughly until well combined.
- Fold in chopped bacon and shredded cheddar cheese evenly into the mixture.
- Shape the mixture into a loaf and place in a greased loaf pan or on a baking sheet. Brush the top with additional BBQ sauce for a glazed finish.
- Bake at 375°F (190°C) for 55-60 minutes, or until the internal temperature reaches 160°F (71°C). Use a meat thermometer to ensure doneness.
- Allow the meatloaf to rest for 10 minutes after baking. Garnish with chopped parsley and extra cheese if desired.
- Slice and serve hot, optionally drizzled with more BBQ sauce for added flavor.
Notes
- For a spicy kick, add sliced green peppers or jalapeños into the meat mixture.
- Leftover meatloaf can be stored in an airtight container in the fridge for up to 3 days, or freeze slices for longer storage.
- Reheat in the oven, microwave, or using a Ninja Air Fryer for crispy, delicious leftovers.
