- 2 cups cooked chicken, shredded or diced
- 1 ripe avocado, sliced or mashed
- 4 slices of your favorite bread (whole wheat, sourdough, or brioche)
- 1 cup shredded cheese (cheddar, Monterey Jack, or provolone)
- 1 small red onion, thinly sliced
- Fresh lettuce or spinach leaves
- 1 tablespoon mayonnaise or Greek yogurt (optional)
- Salt and pepper to taste
- Butter or olive oil for toasting
Instructions
- Spread mayonnaise or Greek yogurt on one side of each bread slice for added creaminess, if desired.
- Layer the cooked chicken evenly on two slices of bread.
- Add slices of ripe avocado on top of the chicken for richness.
- Sprinkle shredded cheese over the avocado to melt into a gooey topping.
- Top with sliced red onion, fresh lettuce or spinach, and close with the remaining bread slices.
- Heat a skillet or grill pan over medium heat. Brush the outside of each sandwich with butter or olive oil.
- Grill the sandwiches for about 3-4 minutes on each side until golden brown and cheese has melted.

- Use ripe avocados for maximum creaminess.
- Feel free to add extra toppings like crispy bacon or sliced tomatoes.
- For added crunch, sprinkle fried onions or crushed chips before grilling.
