  • 2 cups cooked chicken, shredded or diced
  • 1 ripe avocado, sliced or mashed
  • 4 slices of your favorite bread (whole wheat, sourdough, or brioche)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or provolone)
  • 1 small red onion, thinly sliced
  • Fresh lettuce or spinach leaves
  • 1 tablespoon mayonnaise or Greek yogurt (optional)
  • Salt and pepper to taste
  • Butter or olive oil for toasting

Instructions

  1. Spread mayonnaise or Greek yogurt on one side of each bread slice for added creaminess, if desired.
  2. Layer the cooked chicken evenly on two slices of bread.
  3. Add slices of ripe avocado on top of the chicken for richness.
  4. Sprinkle shredded cheese over the avocado to melt into a gooey topping.
  5. Top with sliced red onion, fresh lettuce or spinach, and close with the remaining bread slices.
  6. Heat a skillet or grill pan over medium heat. Brush the outside of each sandwich with butter or olive oil.
  7. Grill the sandwiches for about 3-4 minutes on each side until golden brown and cheese has melted.
