- 3 ripe bananas, mashed

- For the cinnamon crunch topping:
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 3 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
- Mix mashed bananas, melted butter, eggs, and vanilla until well combined.
- In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- In a small bowl, combine oats, brown sugar, cinnamon, and melted butter; mix until crumbly. Set aside.
- Pour batter into prepared loaf pan. Sprinkle cinnamon crunch streusel evenly over the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Store leftovers wrapped tightly in foil or in an airtight container for up to 3 days at room temperature.
- Freeze slices for up to 3 months, reheating in the microwave or toaster.
