Instructions
- Preheat oven to 350°F (175°C). Roll out the pie crusts onto a floured surface and fit into a pie dish. Prick the bottom with a fork, then blind bake for 10-12 minutes until lightly golden.
- In a mixing bowl, whisk together sweetened condensed milk, eggs, lemon juice, lemon zest, vanilla extract, and salt until smooth.
- Pour the lemon filling into the pre-baked pie crust and smooth the top with a spatula.
- Bake at 350°F (175°C) for 20-25 minutes until the filling is set and slightly puffed.
- Let the pie cool completely on a wire rack. Garnish with fresh berries or whipped cream if desired.
