  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 1/2 pounds ground beef (or ground turkey for a lighter option)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • For the glaze:
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, eggs, ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  2. Transfer the meat mixture into a loaf pan or form it into a loaf shape on a lined baking sheet.
  3. Bake in a preheated oven at 375°F (190°C) for about 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  4. While baking, mix the ketchup, brown sugar, and Dijon mustard to prepare the glaze.
  5. About 10 minutes before the meatloaf is done, spread the glaze evenly over the top.
  6. Return to the oven and bake for an additional 10 minutes until the glaze is bubbly and caramelized. Rest for a few minutes before slicing and serving.

Notes

  • Use lean ground turkey as a healthier alternative, but note that it may be slightly drier.
  • Oatmeal, crushed crackers, or almond flour can substitute breadcrumbs for gluten-free options.
  • Adjust seasoning according to taste, adding more thyme or pepper if desired.
