  • Total Time: 1 hour 10 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale
  • 1 lb (450g) ground beef or ground turkey
  • 1 cup bread crumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine ground meat, bread crumbs, milk, chopped onion, minced garlic, and egg. Mix thoroughly until well combined.
  2. In a small bowl, whisk together gochujang, soy sauce, honey (or brown sugar), and sliced green onions to create the Korean BBQ glaze.
  3. Shape the meat mixture into a loaf on a baking sheet or in a loaf pan. Spread half of the glaze over the top.
  4. Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, or until internal temperature reaches 160°F (71°C).
  5. Remove from oven, brush with remaining glaze, and bake for an additional 10 minutes to create a glossy crust.

Notes

  • Use lean ground meat to keep the meatloaf moist and flavorful.
  • Adjust the amount of gochujang according to your spice preference.
  • Let the meatloaf rest for 10 minutes before slicing for cleaner cuts and easier serving.
