- 4 large russet potatoes, diced
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 4 slices cooked bacon, crumbled
- 1 cup salsa
- Olive oil, salt, and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper, and roast for 30 minutes until crispy.
- In a skillet, cook ground meat until browned, add taco seasoning, and simmer for 5 minutes.
- Assemble bowls with roasted potatoes, seasoned meat, sprinkle with cheese, and return to oven for 5 minutes until cheese melts.
- Top with sour cream, salsa, green onions, and bacon bits. Serve hot.
Notes
- Feel free to substitute ground chicken or veggie crumbles for the meat.
- Use Greek yogurt instead of sour cream for a healthier option.
