- 2 lbs beef chuck roast, cut into chunks
- 1 large onion, sliced
- 3 carrots, sliced
- 8 oz mushrooms, sliced
- 1 cup pearl onions
- 3 cloves garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a skillet; brown beef chunks on all sides. Transfer to slow cooker.
- Sauté onions, carrots, and mushrooms until slightly tender.
- Add garlic, tomato paste, thyme, salt, and pepper; cook for 2 minutes.
- Transfer vegetables to slow cooker with beef.
- Pour in red wine and beef broth, mix gently.
- Cook on low for 8 hours or until beef is tender.
Notes
- You can substitute red wine with beef broth for a non-alcoholic version.
- Serve with crusty bread or mashed potatoes.
