Ingredients

  • 3 large egg whites
  • 200 grams (1 cup) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar or lemon juice
  • Food coloring (brown, white, or desired shades)
  • Optional: cocoa powder or edible dust for added realism

Instructions

  1. Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat egg whites until soft peaks form.
  3. Gradually add sugar while continuing to beat until stiff, glossy peaks are achieved.
  4. Mix in vanilla extract and vinegar or lemon juice.
  5. Divide the meringue if you wish to color different portions.
  6. Color the meringue with food coloring as desired for realistic mushroom caps and stems.
  7. Fill a piping bag fitted with a round tip with the meringue.
  8. Pipe small, rounded blobs for caps and elongated shapes for stems. Add a small dollop on top for the cap.
  9. Place on the prepared baking sheet and bake for 1.5 to 2 hours until crisp and dry.
  10. Turn off the oven and let the meringue mushrooms cool completely inside the oven.
  11. Optionally, dust caps with cocoa powder or edible dust for more realism. Attach caps to stems with melted chocolate if needed.
