Ingredients

  • 8 oz. pasta (penne or spaghetti)
  • 2 cups sliced mushrooms
  • 3 cups fresh spinach
  • 1 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté garlic and mushrooms until tender.
  3. Add spinach to the skillet and cook until wilted.
  4. Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and creamy.
  5. Add cooked pasta to the skillet and toss to coat evenly. Season with salt and pepper.
  6. Serve hot garnished with extra parmesan and fresh herbs if desired.
