- 8 oz. pasta (penne or spaghetti)
- 2 cups sliced mushrooms
- 3 cups fresh spinach
- 1 cup grated parmesan cheese
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté garlic and mushrooms until tender.
- Add spinach to the skillet and cook until wilted.
- Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and creamy.
- Add cooked pasta to the skillet and toss to coat evenly. Season with salt and pepper.
- Serve hot garnished with extra parmesan and fresh herbs if desired.
Notes
- You can replace heavy cream with Greek yogurt for a lighter version.
- Add red pepper flakes for a spicy kick.
