Instructions
- Mix graham cracker crumbs with melted butter until crumbly and press into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 10 minutes, then cool.
- Cream together cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and vanilla extract until combined.
- Fold in caramel sauce for Butterbeer flavor.
- Divide batter into bowls and add different food coloring gels to each. Spoon dollops of each colored batter onto the crust and swirl with a toothpick to create a galaxy pattern.
- Bake at 325°F (160°C) for 55-60 minutes until center is almost set. Cool gradually in the oven, then refrigerate for at least 4 hours or overnight.
