Instructions
- Peel and dice the potatoes into bite-sized pieces. Boil in water until tender, about 10-12 minutes. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
- Add ground turkey to the skillet, cook until browned and cooked through, breaking it apart as it cooks. Season with salt, pepper, and paprika.
- Fold in the cooked potatoes and cook for an additional 2-3 minutes to combine flavors. Garnish with chopped parsley if desired. Serve hot.
