Instructions
- In a mixing bowl, combine pumpkin puree, softened cream cheese, honey or maple syrup, pumpkin pie spice, and vanilla extract. Mix until smooth and well incorporated.
- Gradually stir in the graham cracker crumbs until the mixture becomes firm enough to roll. Adjust with more crumbs or pumpkin puree if needed.
- Using a tablespoon or cookie scoop, portion out the mixture and roll into smooth balls. Place on a parchment-lined tray.
- Refrigerate the pumpkin pie balls for at least 30 minutes to set. Optional: dip in melted chocolate or sprinkle with chopped nuts before serving.
Notes
- If the mixture is too sticky, add a bit more graham cracker crumbs; if too dry, add a touch of pumpkin puree or honey.
- Chill the balls well for best texture and flavor.
