- 1 red bell pepper, sliced

Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced chicken, season with salt and pepper, and cook until browned.
- Stir in honey and minced chipotle peppers, cook for 2-3 minutes.
- Meanwhile, sauté bell peppers until tender.
- Assemble bowls with rice, chicken, and peppers, garnish with fresh herbs.

- You can adjust spice level by adding more or less chipotle peppers.
- Use freshly cooked rice for best texture.
