- 2 medium apples, grated or finely chopped
- 1 cup buttermilk (or milk mixed with 1 tablespoon lemon juice)

Instructions
- In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt to evenly distribute the spices.
- In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar until the mixture is light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- Fold in grated or chopped apples. Alternate adding the dry ingredients and buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Pour batter into a greased 9-inch round cake pan or baking dish. Bake at 350°F (175°C) for 35–40 minutes, until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
- For the brown sugar icing, combine brown sugar, butter, and heavy cream in a saucepan over medium heat. Bring to a gentle boil, stirring constantly, then simmer for 2 minutes. Remove from heat, stir in vanilla, and let slightly cool.
- Gradually add powdered sugar until smooth and spreadable. Frost the cooled cake generously with the icing.
Notes
- Optionally, add chopped walnuts or pecans to the cake batter or as a topping for added texture.
- Ensure the cake is completely cooled before applying the frosting to prevent melting.
- For a richer flavor, substitute dark brown sugar in the icing.
