Instructions
- Preheat your oven to 400°F (200°C). Ensure lamb chops are at room temperature for even cooking.
- Pat the lamb chops dry and rub them with olive oil, minced garlic, chopped rosemary, thyme, salt, pepper, and paprika if using. Allow to marinate for 10 minutes.
- Place seasoned lamb chops on a baking sheet lined with parchment paper or a lightly greased roasting pan.
- Bake for 12-15 minutes, turning once halfway through, until reaching your desired doneness (medium-rare at 135°F/57°C internally).
- Optionally, broil for an additional 2 minutes for a crusty exterior.
- Remove from oven, let rest for 5 minutes, then squeeze fresh lemon over the lamb chops before serving.
