- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups potatoes, diced
- 1 can corn kernels
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup milk or heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add chopped onion and minced garlic, sauté until fragrant, about 2 minutes.
- Stir in diced potatoes and cook for 5 minutes, then add beef broth.
- Bring to boil, reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add corn, shredded cheese, and milk. Stir until cheese melts and soup is creamy. Season with salt and pepper.
Notes
- For extra flavor, add a splash of Worcestershire sauce or hot sauce.
- Serve with crusty bread or a side salad.
