- 1 lb (450g) boneless chicken breasts or thighs
- 4 cups chicken broth
- 1 tablespoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon grated ginger
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup spinach or kale, chopped
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until tender.
- Add turmeric, cumin, salt, and pepper; cook for 1 minute until fragrant.
- Add chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Add chicken pieces and cook until fully cooked, about 10 minutes.
- Shred the cooked chicken slightly with a fork and add spinach or kale, cooking for another 2 minutes.
- Adjust seasoning as needed and serve hot.

- Use fresh turmeric for a more vibrant flavor and color.
- Can substitute with cooked shredded chicken for quicker preparation.
