Ingredients
Scale
- 1 lb beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can diced tomatoes (14 oz)
- 4 cups beef broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: chopped parsley and hot sauce for garnish
Instructions
- Start by gathering all your ingredients and chopping the vegetables into bite-sized pieces. This helps in quicker cooking and enhancing the flavors.
- Heat a large pot over medium-high heat. Add olive oil, then brown the beef cubes until they develop a rich, caramelized crust. Remove and set aside.
- In the same pot, add diced onion, garlic, carrots, and celery. Sauté until fragrant and slightly softened, about 5 minutes.
- Return the beef to the pot, pour in the diced tomatoes and beef broth. Stir in smoked paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and let simmer for 1.5 to 2 hours, until the meat is tender.
- Adjust the seasoning with salt and pepper. Garnish with chopped parsley or hot sauce as desired. Serve hot and enjoy your spooky Halloween stew!
Notes
- Use fresh vegetables for vibrant color and flavor
- For a thicker stew, simmer uncovered for additional 15-20 minutes
- Replace beef with hearty vegetables like mushrooms or lentils for a vegetarian version
