Instructions
- In a small bowl, combine lemon juice, lemon zest, minced garlic, olive oil, oregano, thyme, smoked paprika, salt, and pepper. Whisk until well blended.
- Place the fish fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fish, ensuring each piece is well coated. Let marinate in the refrigerator for 15-20 minutes.
- Preheat oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it. Arrange the marinated fish in the dish. Surround with cherry tomatoes, black olives, and optional vegetables.
- Bake uncovered for 12-15 minutes or until the fish flakes easily with a fork. Garnish with fresh parsley before serving.
